black bean brownies

Please please please do not be scared off by the ‘black bean’ part of this recipe, I promise that you will not even notice they are there! I proved this to be true when I offered one to my boyfriend, conveniently forgetting to mention the main ingredient. He is not exactly the adventurous type when it comes to food.. He knows what he likes, and he likes what he knows. I knew that there was no way he would ever willingly eat something called a black bean brownie, so I also knew it was just best not to tell him. The response I received from my uninformed taste tester went a little like this – “Yum! They’re good.. but maybe a little dry” (this has now been fixed don’t worry!) The taste and texture of these baked beauties are reminiscent of the classic guilt ridden chocolate brownie that we all know and love, however they are completely guilt free! All the fatty and sugary baddies have been traded in for protein packed goodness. These brownie bites make the perfect pre or post workout snack, and are also a great chocolaty alternative to curve afternoon cravings.

INGREDIENTS

400g black beans

½ cup rolled oats

2 eggs

¼ cup coconut oil

2-3 tbs maple syrup

2-3 tbs cacao powder

1tsp vanilla essence

1tsp baking powder

(I also chose to add some chopped walnuts, presoaked tbs of chia seeds, scoop of protein powder and a tbs of cacao nibs)

METHOD pre heat oven to 180 degrees celsius. Combine everything in the food processor. Spoon mixture into lined mini cupcake trays and top with walnuts if you like. Then just bake for 8-10 minutes. ENJOY! xx
